Lentil Salad With Moroccan Coconut Dressing

This healthy and refreshing Moroccan flavoured salad is a great meal for those looking to watch those calories.


Salad:  3/4 cup lentils, dry (2 cups cooked)

1 large bell pepper, chopped

1/2 long English cucumber, seeded & chopped

1 large tomato, chopped

1 cup cilantro, chopped

2 green onions, chopped

Lemon/lime for garnish

Moroccan Coconut Dressing:

1/3 cup light Coconut Milk, canned

1 tbsp lime or lemon juice

1/2 tsp cumin

1/2 tsp turmeric

1/2 tsp garlic powder

1/4 tsp cinnamon

3/4 tsp salt

1/2 tsp ground black pepper

1/8 tsp red pepper flakes


1. In a small pot, combine 3/4 cup lentils with 1 + 1/2 cups water, bring to a boil, reduce heat to low and cook for 17 minutes.

2. Remove from heat, let stand covered for 5 minutes and fluff with a fork. Lentils should be cooked al dente.

3. In a small bowl, whisk together Dressing ingredients and set aside.

4. In a large bowl, add Salad ingredients, pour prepared Dressing over and gently mix to combine.

5. Serve cold or warm, with whole wheat pita and a lime/lemon wedge on a side.
